Ingredients for the cake base:
1 cup of walnuts
Half a cup of dates, pitted
A quarter of a teaspoon of vanilla beans
a little salt
Ingredients for the top and inside of the cake:
2 small bananas
6 to 7 apricots
Half a cup of coconut oil, melted
Half a cup of shredded coconut (shown in the picture)
How to prepare:
Put the walnuts in a food processor or chopper and turn on the machine until the walnuts are completely crushed. Add the rest of the ingredients for the base of the cake to the food processor and mix thoroughly to form a ball of dough.
Take a 20-22 cm round cake pan with detachable walls and press the dough in a thin layer on the bottom of the pan. While you prepare the ingredients for the top and inside of the cake, place the mold in the refrigerator.
Peel and chop the bananas. Remove the seeds from the apricots and chop the apricots. Put all the ingredients except for the small pieces of coconut in a food processor and mix until it becomes puree. Then pour the coconut into it and stir gently and pour the mixture into a round cake mold on the cake base.
Place the cake in the freezer for at least 2 hours to harden. Remove the walls of the mold and cut the cake.
Serve it and put the rest of the cake in the freezer.
