Sweet potato juice – you read that right. Most people think you need to cook sweet potatoes before you eat them, but raw sweet potato juice is actually incredibly beneficial.

The sweet potato contains an abundance of vitamins and minerals. They are a great source of vitamin A (in the form of beta-carotene), vitamin C, manganese, copper, pantothenic acid and vitamin B6. They also contain sufficient levels of potassium, niacin, vitamin B1, vitamin B2 and phosphorus.

Sweet potatoes have a variety of different health effects on the body. First off, sweet potatoes are great at regulating blood sugar levels, thanks to compounds called adiponectins, which are protein hormones produced by our fat cells that help with insulin metabolism (1).

Be sure to use organic sweet potatoes when juicing, as you want to consume the peel, too. Conventional sweet potatoes are sprayed with bud-nip, a highly toxic chemical that you do not want to be consuming.

Ingredients:

– 2 cups raw sweet potato
– 2 carrots
– 6 ribs of celery
– 1-inch fresh ginger root
– 1/2 lemon, peeled
– 1 apple
